Recipe: Mocha Rice Krispies Treats

Remember the good ol’ days, when soaring off the swingset and licking the mixing bowl clean were daily highlights? My mother couldn’t even cook an egg, but she made heavenly rice krispies treats. The delicious aroma wafted out our kitchen window and drew kids from up and down the block. Nowadays my fingers don’t get sticky with sweetness very often, but when I saw 240Sweet‘s fresh take on an old classic, I had to share.

  • 8 ounces (approximately 9) coffee chocolate chip marshmallows
  • 2 tablespoon butter
  • 3 cups crisped rice cereal
  • 8-inch round pan
  • Medium saucepan

  • Grease the bottom and sides of the 8-inch round pan with 1 tablespoon of butter. Reserve the excess butter for coating the spatula.
  • Melt one tablespoon of butter over low heat in a medium saucepan. Add marshmallows and stir until chips are completely melted.
  • Remove from heat and add crisped rice cereal. Stir until completely mixed.
  • Coat the spatula with the excess butter and use it to transfer the mixture to the 8-inch pan.
  • Let it cool and cut into wedges.
  • Consume. Repeat.

240Sweet owners, Alexa Lemley and Samantha Aulick, craft their own treats in small batches with local, all-natural and organic ingredients. Located in Columbus, Indiana, the gift shop features uniquely flavored marshmallows, including chocolate covered pretzel, bacon chocolate chip, peppermint and more! Be sure to check out their sweet deal on our site – 50% off a marshmallow making class for two and take-home treats ($20 Value).
